Ingredients:

  • 1 small fennel bulb (thinly sliced, about 1/2 cup)

  • 1 small cucumber (thinly sliced, about 1/2 cup)

  • 2 cups rocket (arugula) leaves

  • 1 tablespoon WAKEAT sweet pea miso  

  • 1 tablespoon rice vinegar

  • 1 tablespoon lemon juice (freshly squeezed)

  • 1 teaspoon honey or maple syrup

  • 1 tablespoon olive oil

  • 1 small garlic clove, minced

  • Salt and pepper to taste

  • 1 teaspoon sesame seeds (optional)

  • Fresh dill or fennel fronds for garnish (optional)


Instructions:

  1. Prepare the Vegetables:

    • Thinly slice the fennel bulb using a mandoline or sharp knife.

    • Slice the cucumber into thin rounds.

    • Rinse and dry the rocket leaves.

    • Combine the fennel, cucumber, and rocket in a large mixing bowl.

  2. Make the Miso-Lemon Dressing:

    • In a small bowl, whisk together the white miso paste, rice vinegar, lemon juice, honey (or maple syrup), olive oil, and minced garlic until smooth.

    • Taste and season with salt and pepper as needed.

  3. Assemble the Salad:

    • Drizzle the miso-lemon dressing over the fennel, cucumber, and rocket mixture.

    • Toss gently to coat the vegetables and greens evenly with the dressing.

  4. Serve:

    • Divide the salad between two plates or bowls.

    • Garnish with sesame seeds and fresh dill or fennel fronds if desired.
